Stuffed Baked Potatoes

Ingredients

  • 5 med baking potatoes
  • 1/4 c butter
  • 2 c shredded cheddar cheese
  • 3/4 c sour cream
  • 1 envelope ranch salad dressing mix
  • 1 T snipped chives
  • 1 garlic clove, minced
  • crumbled bacon and chopped ggreen onions

Preparation

Step 1

Bake potatoes 400* for 1hr or until tender. Reduce heat to 375*. Cut each potatoe in half lengthwise, scoop out pulp, leaving a thin shell. In a lg mixing bowl, beat pulp with butter. Stir in 1c cheese, sour cream, salad dressing mix, chives, and garlic. Spoon in potato shells. Sprinkle with remaining cheese.
Place on a baking sheet. Bake for 15-20min or until heated through. Top with bacon and green onions
