Ingredients
- 1/2 cup of chopped onion
- 1/4 cup of butter
- 1/4 cup of chopped bell pepper
- 2 cups of mozzarella cheese
- 2 cups drained whole kernel corn
- salt and pepper to taste
- 1 can of chopped tomatoes drained

Step 1
Sauté the onion and green peppers in butter until the onions are clear or tender. Add the tomatoes and corn and season with the salt and pepper to taste. Combine and bake at 350 degrees for 25 minutes. Top with cheese and bake until the cheese melts.
To spice it up, use drained Rotel tomatoes and add jalapeno pepper and pepper jack cheese.
