Delish Wild Mushroom Soup Serves 8

Ingredients

  • 6 oz. dry mixed wild mushrooms
  • Soaked in 6 cups of water for 3 hours
  • 3 oz. chopped onions
  • 1 Tablespoon Flour
  • 1 Tablespoon Butter
  • 2 Cups Chicken Stock
  • 1 Cup Heavy Whipping Cream
  • Sea Salt and White Pepper (optional)
  • 2 Tablespoons Sherry (optional)

Preparation

Step 1

Caramelize onions with butter in stock pot.
When golden brown in color, stir in flour.
Lift mushrooms out and add to stock pot.
Cook for 5 minutes. Add 4 cups of the
water used to soak the mushrooms to the
stock pot, discard rest. Add chicken stock.
Let simmer for 30 minutes. Pour into blender
or food processor, blend to desired consistency.
Return mixture to stock pot. Add heavy cream.
Add sherry, bring to boil. Season with salt
and pepper to taste
