Fried Pies Pastry

Ingredients

  • Pastry:
  • 8 cups all purpose flour
  • 2 1/2 tsp salt
  • 2 cups vegetable shortening (Crisco)
  • 2 1/4 cups ice water

Preparation

Step 1

Mix flour and salt. Cut in shortening until fine. Add ice water. Mix well forming a large ball.

Make individual pie circles by breaking off dough and rolling into 1 1/2" in diameter balls. Roll out to 6 inch circles approx 1/8" thick, on floured board. Use more flour if necessary to prevent sticking.

Refrigerate between layers of waxed paper overnight. Remove about one hour before filling.

To make pies, flour a board and keep floured as you work. Place two heaping tablespoons of filling on one side of circle. Fold over and seal edges. Drop into deep fryer until slightly browned.
