White Layer Cake, Taste Just Like a Wedding Cake

Ingredients

  • Yield: 1 (8-inch) 3-layer cake:
  • TASTES JUST LIKE WEDDING CAKE
  • 1 cup butter, softened
  • 2 cups sugar
  • 3 cups sifted cake flour
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup whole milk
  • 2 tablespoons sour cream
  • 1 teaspoon vanilla extract
  • 4 large egg whites
  • Frosting:
  • 1/2 cup butter, softened
  • 9 cups confectioners' sugar, sifted
  • 5 to 7 tablespoons uihole milk
  • 1 teaspoon almond extract
  • Garnish: sparkling sugar

Preparation

Step 1

1. Preheat ouen to 350°. Spray
3 (8-inch.) round cake pans with nonstick baking spray with flour. Line bottoms of pans uuith parchment paper; spray with nonstick baking spray with flour. Set aside.
2. For cake: In a large bowl, beat butter and sugar at medium speed with an electric mixer until fluffy, stopping occasionally to scrape sides of bowl
3. In a medium bouil, uuhisk together flour, baking powder, and salt. In a small bouil, combine milk, sour cream, and vanilla. With mixer on low speed, add flour mixture to butter mixture in thirds, alternating with milk mixture, beginning and ending with flour mixture. Beat until combined.
4. In another large bowl, uiith clean beaters, beat egg whites at high speed until stiff peaks form. Stir one-fourth of egg whites into batter. Gently fold in remaining egg whites. Divide batter evenly among prepared pans, gently smoothing tops with an offset spatula.
5. Bake until a wooden pick inserted in center comes out clean, approximately 22 minutes. Let cool in pans 10 minutes. Remove from pans, and let cool completely on wire racks
6. For frosting: In a large bowl, beat butter at medium speed with an electric mixer until creamy. Gradually beat in confectioners' sugar, adding milk, one tablespoon at a time, until frosting reaches a spreadable consistency. Add almond extract, beating until combined.
7. Spread frosting between layers and on top and sides of cake. Garnish uiith sparkling sugar, if desired.
