Chocolate Pinwheel Cookies

Ingredients

  • 1 c. butter, softened
  • 3/4 c. sugar
  • 1 tsp. vanilla extract
  • 1 egg
  • 1-1/2 c. sifted flour
  • 1/4 tsp. baking powder
  • 1/4 tsp. salt
  • 1 square unsweetened chocolate, melted

Preparation

Step 1

Mix butter, sugar vanilla and egg by hand until light and fluffy. Add flour, baking powder and salt to butter mixture and mix by hand.

Melt chocolate in microwave about a minute. After every 20 seconds, stop, stir and repeat till melted.

Divide dough in half. Add the chocolate to half of the cookie batter. Mix. Put into the refrigerator for a few hours until it is nice and cold.

Roll it out into 6 x 16 inch rectangle into 1/4 inch thickness. Roll out both the white and the chocolate between wax paper, both sides floured first. Remove the wax paper. Invert the chocolate onto the white dough. Next, roll it up into a pinwheel, nice and tight.

Place back into the refrigerator overnight.

Slice into 1/8 inch pieces. Place on an ungreased cookie sheet. Preheat oven to 350 degrees. Bake for 10-12 minutes or until lightly browned.
