Beef and Pepper Stir-Fry

Ingredients
- 1/4 lb tenderloin thin strips
- 1/2 tbsp red wine vinegar
- 1/2 tbsp soy sauce
- 1 tsp ginger root, minced
- 1 clove garlic, minced
- 1 tbsp vegetable oil
- 1 small onion, thinly sliced
- small green pepper, cut into strips
- small red pepper, cut into strips
- small yellow peppers, cut into strips
- 1 tbsp oyster sauce
- 1/4 tsp sesame oil
- 1 tsp cornstarch
- 1/4 cup beef broth

Step 1
In small bowl combine beef, vinegar, soy sauce, ginger root and garlic. Cover and marinate at room temperature for 30-45 minutes. In medium pan, heat 1/2 tbsp oil over high heat. Stir-fry beef mixture for about 5 minutes or until browned. Remove beef and juices from pan, reserve. Heat remaining oil in fry pan, stir-fry onion and peppers about 2 minutes, or until tender-crisp. Return beef and juices to frying pan. Stir in oyster sauce and sesame oil. In a cup dissolve cornstarch in a tbsp of broth. Stir remaining broth and cornstarch mixture in pan. Cook for about 1 minute or until slightly thickened, stirring constantly.
