Ingredients
- 3 C. White Bread Cubes, cut into 1/2-in. cubes
- 1/4 C. Olive Oil
- 1/2 tsp. Each Kosher Salt, Freshly Groun Black Pepper, Dried Basil & Paprika
- 1/2 C. Parmesan, shredded
- 1/4 C. Fresh Lemon Juice, strained
- 2 Tbsp. Mayonnaise
- 1 tsp. Garlic, minced
- 1 tsp. Anchovy Paste
- 1 tsp. Sugar
- 1/4 tsp. Worcestershire Sauce
- 1/3 C. Olive Oil
- 1 Head Romaine Lettuce, chopped ( about 12 C. ) Shaved Parmesan
Preparation
Step 1
Toast bread cubes in 1/4 C. oil in a non-stick skillet over med-high heat till lightly browned, 4-5 min. Toss with salt & pepper, basil & paprika; set aside. Whisk remaining ingredients ( except 1/3 C. oil ), whisking till emulsified; season with salt & pepper. Toss with romaine; garnish with croutons & parmesan. Serve.
