Ingredients
- 1 Tbsp. vegetable oil
- 1/2 cup chopped scallions (green and white parts)
- 4 cups shredded cooked chicken
- 1 1/2 tsp. chili powder
- 1 tsp. ground cumin
- 2 Tbsp. fresh lime juice
- 1 tsp. minced chipotle chiles in adobo sauce
- 1 cup prepared refried beans
- 8 6-inch flour tortillas, warmed in the microwave if desired
- Sour cream, for serving
- Prepared salsa, for serving
- Shredded lettuce, for serving
Preparation
Step 1
Heat the oil in a large skillet over medium-high heat. Add the scallions and cook for 1 minute. Add the chicken and cook for 2 minutes, until golden brown on all sides. Add the chili powder and cumin and stir to coat the chicken and scallions. Cook for 1 minute, or until the spices are fragrant. Add the lime juice and chipotle chiles and cook for 2 minutes to heat through.
Spread refried beans on the flour tortilla and top with the chicken mixture. Serve with sour cream, salsa, and shredded lettuce on the side.
