- 8 tsp butter (room temp)
- 6 eggs
- 8 tsp sugar
- 3/4 cup sugar
- 8 oz bittersweet chocolate
- 1/2 cup flour
- 1/2 cup cocoa
- 1/2 cup ground almond (optional)
- 1 tbsp instant coffee

Preheat 400 degree - Bake 12 - 14 minutes
Butter inside of 8 custard cups and sprinkle with tsp sugar. Gently shake out. Coarsely chop chocolate. Place ½ cup butter, chocolate, cocoa and coffee in a pot and heat on low. Separate 3 eggs, place yolks in large bowl. Set aside eggs whites. Beat egg yolks gradually adding 3/4 cup sugar until pale yellow in color. On low speed add chocolate mixture. Then gradually beat in flour and almonds just until combined. Whisk egg whites until soft peaks. Cook until tops are set about 12 - 14 minutes. Centers will be runny. Serve with whipped cream or ice cream.
