Macadamia Nut-White Chocolate Chunk Cookie

Ingredients

  • 1 C +2 Tbs flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt (omit if using salted macadamias)
  • 1/2 C unsalted butter
  • 1/2 C packed brown sugar
  • 1/4 C sugar
  • 1 egg
  • 1 1/2 tsp vanilla
  • 9 oz white chocolate, coarsely chopped
  • 1 C mac nuts, chopped

Preparation

Step 1

Preheat oven to 350* w/ rack in center. Sieve flour, baking soda and salt into small bowl. Shake and set aside. Place butter and sugars in large mixing bowl. Beat on high until mixture is light and fluffy (about 5 min). Scrape bowl while mixing. Beat in egg and vanilla. On low speed add flour mixture for a short time. Use a spatula to fold in white choc and nuts.
Drop by Tbs on cookie sheet 1" apart. Press w/ fork tines. Bake 8-10min. Remove and cool 15 min if you can!
