Sweet Potato Muffins

Ingredients

• 1 1/2 cups flour
• 2 tsp. baking powder
• 1/2 tsp. cinnamon
• 1/8 tsp. nutmeg
• 1/8 tsp. salt
• 2/3 cup sugar
• 2/3 cup peeled, cooked, mashed sweet potato (about 5 oz. potato)
• 1/2 cup milk
• 1/4 cup butter, melted
• 1 large egg
• Cinnamon sugar
• 2 Tbs. sugar
• 1/4 tsp. cinnamon

Preparation

Step 1

Sift together first 5 ingredients. In large bowl with wire whisk, beat sugar, sweet potato, milk, butter, and egg until well mixed. Stir in flour mixture until just moistened. Grease muffin pan. Fill each muffin pan half full and sprinkle with cinnamon sugar. Bake at 400 degrees for 15 minutes.
