Frost Bites

Ingredients

  • 3/4 cup raisins
  • 3 Tbsp. orange juice
  • 1/2 cup unsalted butter, softened
  • 3/4 cup sugar
  • 1 1/2 cup rolled oats
  • 1 tsp. vegetable oil
  • 1 large egg
  • 2 tsp. orange peel
  • 1 cup flour1 tsp. baking soda
  • 8 oz. white chocolate

Preparation

Step 1

In a small bowl, combine the raisins and the orange juice. Let sit overnight.

Preheat the oven to 350 degrees.

In a large bowl, beat the butter and sugar until fluffy. Add the egg and the orange peel, and beat until incorporated.

In another bowl, combine the flour and the baking soda. Stir into the butter mixture.

Add the raisins and any leftover soaking liquid and the oats. Mix well.

Drop by rounded teaspoonfuls onto a parchment-lined cookie sheet, spacing the cookies about 2 inches apart, then flatten slightly.

Bake for 9 to 12 minutes. Remove and cool completely.

In a small bowl, microwave the white chocolate and the oil for 3 to 4 minutes on LOW power until melted, stirring once. Let stand for 2 minutes, the stir til smooth.

Either dip 1/2 of the cookie into the chocolate mixture, or drizzle the chocolate over the cookies. Chill until firm.
