Ingredients
- 2 cups flour 2 cups sugar
- 2 cups grated carrots 1 tsp salt
- 2 1/2 tsp baking soda 3 eggs
- 8 oz crushed pineapple 1 cup oil
- 1 tsp cinnamon 1/2 cup chopped nuts
- 3/4 cup raisins rolled in flour 1 1/3 cups coconut
- 1/4 tsp nutmeg

Preparation
Step 1
Mix flour, baking soda, cinnamon, nutmeg and salt. Beat oil, sugar, vanilla and eggs thoroughly. Add dry ingredients and beat until smooth. Add pineapple, carrots, nuts, raisins and coconut.
Bake 350 in round tube pan for 1 hour.
Bake 350 in 9x13 pan for 50 minutes.
Cream Cheese Frosting
3 oz. cream cheese ¼ stick margarine
3 cups sifted powdered sugar
1 tbs. milk
1 tsp vanilla
Cream together butter and cream cheese. Add powdered sugar, milk, vanilla and mix until smooth.
