Upside Down Mini Rhubarb Cake

  • 1/2 cup butter
  • 3/4 cup sugar
  • 2 eggs
  • 1 tbsp vanilla
  • 1 cup flour
  • 1 tbsp baking powder
  • Pinch of salt
  • 2 cup rhubarb (cubed)
  • 1 1/4 cup brown sugar


Preparation time 35mins
Cooking time 75mins


Step 1

Preheat 350 degree - Bake 40 minutes

Butter muffin tin and set aside.

Beat butter and sugar until creamy and pale in color about 2 minutes. Add eggs one at a time. Add vanilla. In a separate bowl combine flour, baking powder and salt. Add the dry ingredients to the butter mixture until combined.

Spread rhubarb evenly in each tin. Add 1 ½ tbsp brown sugar. Place 1 heaping tbsp of batter in each tin. Bake approximately 40 minutes. Cool and turn out. Serve with whipping cream or ice cream.
