  • 1 small onion, finely chopped
  • 1 Tbs. olive oil
  • 2 cups basmati rice (white or brown)
  • 2 1/2 cups water
  • 10 oz. chicken broth
  • 1/2 cup unsweetened coconut milk
  • 1 Tbs. chopped fresh parsley
  • 2 tsp. grated lemon rind
  • 1 tsp. salt


Servings 8


Step 1

Saute onion in hot oil over medium-high heat 1-2 minutes or until translucent. Add rice, water, broth and coconut milk; bring to a boil. Cover, reduce heat, and simmer 25 minutes (white) or 50 minutes (brown) or until liquid is absorbed and rice is tender. Stir in parsley, lemon rind, and salt.
