Minestrone Soup

Ingredients

  • 1 cup carrots, thinly sliced
  • 1 small zucchini, sliced
  • 1/2 cup onion, chopped
  • 1/2 cup celery, sliced
  • 2 cans (14.5 oz) chicken broth
  • 2 cups water
  • 1 can (28 oz) diced tomatoes, undrained
  • 1 can (14.5) dark red kidney beans
  • 1 cup medium shell pasta, uncooked
  • 1 can italian styled green beans
  • 1 tsp oregano and basil
  • 2 ounces (1/2 cup) parmesan cheese, grated

Preparation

Step 1

Combine all ingredients in Dutch Oven except cheese. Bring to boil, reduce heat. Cover, simmer 25 minutes or until veggies are crisp-tender. Grate cheese on top
