Citrus Tofu & Pineapple
- 1 package firm or extra firm tofu (non-silken)
- 1/2 can frozen orange juice concentrate, thawed
- juice from 1/2 lemon
- juice from 1 lime
- 1 Tbs. balsamic vinegar
- 1 Tbs. oil
- salt & pepper
- 1 fresh pineapple, peeled & sliced into rings
1.Press the tofu to remove moisture: Layer a cutting board or bowl with two layers of towels and place tofu on towels; lay a fresh towel on top of tofu; gently press down on towel to remove any initial water; remove damp towel and place two layers of fresh towels on top; carefully place a bowl or other weight on top of towels to press down on tofu; let sit for at least 15 minutes.
2.Cut pressed tofu into 8 pieces.
3.Mix juices, vinegar, oil, and salt & pepper; marinate tofu slices for an hour or so.
4.Grill on a lightly oiled BBQ over medium-high heat, basting with marinade, for 10-15 mins.
5.Brush fresh pineapple slices with some of the marinade and grill for about 10 mins; make sure pineapple browns but does not burn.
