Ingredients
- Boneless pork roast 3 - 3 1/2 pounds
- 1/4 cup butter, cubed
- 1 cup diced carrots
- 1 cup chopped onion
- 1 tsp paprika
- 3/4 cup chicken broth
- 2 T flour
- 1/2 cup sour cream
- 1 T minced parsley
- 1/2 tsp salt

Preparation
Step 1
BROWN roast with butter in skillet over medium heat for 5 minutes each side. Transfer to roasting pan
SAUTE onions and carrots until crisp-tender. Place around meat, sprinkle with paprika. Add broth to pan
COVER and bake at 350 degrees for 1 - 1 1/2 hours. Uncover; bake 50 minutes longer, use meat thermometer to 160 degrees
REMOVE roast and vegies to a serving platter; keep warm. Pour pan drippings to measuring cup; skim fat
ADD water to measure 2 2/3 cup
COMBINE flour and sour cream stirring in small sauce pan until smooth; add drippings, parsley and salt. Bring to a boil; cook and stir for 2 minutes or until thickend. Serve with roast
