Ingredients

  • 1 lb flank steak (thinly sliced)
  • vegetable oil (for frying)
  • 1 large red bell pepper (sliced)
  • 1 large onion (sliced)
  • 1 tablespoon Chili powder
  • 1 tablespoon lime juice
  • 2 1/2 teaspoons olive oil
  • 3/4 teaspoon salt
  • 8 garlic cloves (minced)
  • 8 (6 inch) corn tortillas
  • 3 tablespoon fresh cilantro (chopped)
  • sour cream

Preparation

Step 1

Add vegetable oil to a skillet and turn to medium-high. Add peppers and stir fry for about 4 minutes. Add onions and cook until vegetables are cooked as desired. Remove pepper mixture from pan, place in a large bowl and cover to keep warm.
Step 2: Add steak to pan and cook for about 7 minutes or until cooked as you like.

Step 3: Add cooked steak to pepper mixture. Add in chili powder, salt, lime juice, olive oil, and fresh garlic. Toss well to coat.
Step 4: Heat tortillas according to package directions. Spoon steak/vegetable mixture evenly over tortillas and top with chopped cilantro and sour cream.
