Ingredients
- 1/2 lb sirloin or tenderloin, cut into small pieces
- 15-20 uncooked shrimp, peeled and deveined
- 1 T. olive oil
- 1/2 red onion, chopped
- 2-3 cloves garlic, minced
- 2 T. fresh grated ginger
- 1 1/2 T. Thai seasoning
- salt and pepper
- 1-2 t. red chili paste (optional)
- 12 oz broccoli slaw
- 1/2 cup low sodium, beef broth
- 1 cup fresh spinach
- 8 oz frozen snap peas, thawed
- 2-3 green onions chopped (only the green portion)
- Juice of half a lemon
Preparation
Step 1
In a large skillet, on medium heat saute red onion in olive oil for about 1 minute. Add garlic and chopped beef. Add all seasonings and stir. Cook, stirring a few times until beef starts to brown on both sides. Add beef broth, shrimp and broccoli slaw. Stir and cover. Let cook, stirring intermittently until shrimp turns pink. Add spinach, snap peas and green onion and stir. Cook another minute. Serve and enjoy.
