Crab Stuffed Mushroom Caps

Ingredients

  • 24 large stuffing mushrooms
  • 1/4 cup extra-virgin olive oil
  • 13-1/2 cup minced garlic
  • 1 tub whipped chive cream cheese
  • 1 can crab meat
  • 3 tbsp Parmesan
  • 6 tbsp butter

Preparation

Step 1

Remove stems from mushrooms. With a teaspoon scrape off as much of the grills as possible.

In a bowl, combine cream cheese, Parmesan and crab meat. Fold together until thoroughly combined. Drizzle 1/2 tsp olive oil in each mushroom cap, then add a sprinkle of minced garlic. Add 1 tbsp mixture to each cap. Place in a foil baking pan. Cut butter into cubes and add to the bottom of the pan. Sprinkle remaining minced garlic over the butter.

Cover with foil and bake at 350º for 40 minutes.

Set oven to broil. Remove foil and brown lightly for about 5 minutes. Watch carefully so they don't burn.
