Ingredients
- 6-8 eggs beaten
- 2 T. butter
- 1/4 red onion, chopped
- 1 cup fresh spinach
- 1/4 cup diced green chili
- 1 roma tomato, diced
- 1 avocado, sliced
Preparation
Step 1
Saute onion in butter over medium high heat until it becomes translucent, about 2 minutes. Add spinach and stir until it starts to wilt. Add tomato and green chili and stir. Reduce heat to medium. Pour eggs over the top of the veggies. Cook, stirring often to mix and keep eggs from burning. Once eggs are cooked, put on plate and add avocado slices.
