Roasted Garlic and Red Pepper Dip
A quick and delicious dip that will surely impress your friends.
- 1 head garlic (roasted)
- 1 tbsp olive oil
- 4 oz cream cheese, softened
- 1 tsp balsamic vinegar
- 1 jar roasted red pepper, drained
- 3 tbsp parsley leaf
- 3 tbsp fresh cilantro (optional)

TO ROAST GARLIC: Preheat oven to 350 degrees. Remove loose skin from garlic but do not separate cloves. Cut the head off the top of entire cloves and drizzle olive oil and sprinkle with Kosher salt. Wrap in foil paper and cook for 35 - 40 minutes. Remove from oven and let cool.
Remove garlic clove by pressing out the cooled garlic into a food processor and add the remaining ingredients. Be sure that your red peppers have no seeds. Pulse until well combined. Season to taste.
