Ingredients
- Cake:
- 3/4 cup white chocolate chips
- 1/2 cup hot water
- 2 1/2 cups flour
- 1 1/2 cups sugar
- 1 teaspoon soda
- 1/2 teaspoon baking powder
- 2 sticks margarine
- 1 cup buttermilk
- 3 eggs
- 1 teaspoon vanilla
- 1/2 cup chopped pecans
- 1/2 cup flaked coconut
- dash of salt
- Frosting:
- 3/4 cup white chocolate chips
- 2 1/2 tablespoons flour
- 1 cup milk
- 2 sticks margarine, softened
- 1 cup sugar
- 1 1/2 teaspoons vanilla

Step 1
Preheat oven to 350 degrees. Melt chocolate in hot water over low heat or in a double boiler; let cool. Combine, flour, sugar, soda, baking powder, salt, butter, and buttermilk. Blend at low speed til moistened. Then beat 1 minute at medium speed. Add eggs, melted white chocolate, and vanilla. Beat 1 minute at medium speed. Stir in pecans and coconut. Pour batter into three greased and floured 8 or 9" layer pans. Bake for 30 to 35 minutes or until toothpick inserted in center comes out clean. Cool.
In double boiler, combine flour, milk, and white chocolate in pan. Cook stirring constantly till mixture is very thick. Cool completely. Cream butter, sugar, and vanilla. Beat till light and fluffy (about 3 minutes). Gradually add (completely cooled) chocolate mixture. Beat at high speed till it is the consistency of whipped cream. Frost cake and refrigerate.
