Peach Melba Mimosas

Ingredients

  • 1 1/2 cups thawed raspberries
  • 1/2 cup sugar
  • 1 cup thawed peaches
  • 1 tsp lemon juice
  • 2 bottles champagne or sparkling wine
  • 1/2 pint fresh raspberries for garnish

Preparation

Step 1

1. In blender, puree frozen raspberries & 2 tbsp sugar. Strain puree through fine sieve, set aside
2. Rinse blender, puree peaches with remaining sugar, lemon juice and 3 tbsp of water.
3. Spoon 2 teaspoons raspberry and 2 tsp. peach puree into each glass. Top off with champagne, garnish with raspberries.
