Skillet Flounder with Tomatoes

Ingredients

  • 4 (6 oz.) pieces flounder fish fillets (you can use tilapia or any white fish)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2-3 tomatoes, chopped
  • 1 tbsp cajun seasoning
  • 1/4 cup water
  • salt to taste
  • 1 tsp olive oil

Preparation

Step 1

In a deep skillet, cook onion and garlic in olive oil on medium heat for a few minutes. Add tomatoes and spices, stir and cook until tomatoes are soft, about 2 minutes. Add water and stir. Lay in fish fillets and cook on medium-low, covered until fish flakes easily, approx 10-15. To serve, lay fish on plate and spoon tomato mixture on top. Serve immediately.
