Ingredients

  • 1 cup cold water, divided
  • 3 - 1/4 oz. Envelope unflavoured gelatin
  • 2 cups white sugar
  • 1 cup corn syrup
  • 1/4 tsp salt
  • 2 tsp vanilla
  • 2 - 3 drops orang water (optional)
  • 2 - 3 drop of food coloring (optional)
  • 6 - 8 tbsp confectioner sugar

Step 1

Lightly butter or spray a 13 x 9 x 2 pan and line only the bottom with parchment paper. Sift 3 to 4 tablespoon of confectioner sugar over the entire bottom. It will look thick.

Place ½ cup cold water into a very large mixing bowl and sprinkle all 3 packets of gelatin and let sit for 15 minutes.

Meanwhile, in a large saucepan add the other ½ cup water plus white sugar, corn syrup and salt. Heat over medium heat stirring until the sugar is dissolved and mix starts to boil. Cover and boil for 3 minutes (do not stir at this point). Remove lid and bring to 240 degree on a candy thermometer (about 10 minutes more). Remove from heat.

With mixer at low speed, slowly start drizzling the syrup into the gelatin. Stream it down the side of the bowl. Gradually increase speed to high and beat until it triples in volume. The mix will be thick and stiff. Add vanilla, orange water and food coloring and beat 30 seconds more.

Scrape into the pan and spread with slightly wet spatula, if necessary. Dust with remaining icing sugar. Let stand at room temperature uncovered for 12 hours.
