Lemon Angel Pie

  • CRUST:
  • 4 egg whites
  • 1/4 tsp cream of tartar
  • 1 cup sugar
  • 4 egg yolks
  • 1/2 cup sugar
  • 1/3 cup lemon juice
  • 1/2 pint whipping cream


Servings 6


Step 1

TO prepare meringue crust, beat egg whites until frothy, sprinkle with cream of tartar and continue beating until foamy

GRADUALLY add sugar and beat until sugar is disolved and mixture is stiff

SPREAD in buttered 9-inch pie plate and place in cold oven. Turn temperature to 250 degrees and bake 1 hour and 15 minutes. Cool completely

COMBINE beaten egg yolks, sugar and lemon juice. Cook over medium low to meaium heat until thickened (5-10 minutes) Chill

Prepare whipping cream and chill

TO assemble, spread layer of whipping cream, then lemon filling and the remainder of whipping cream
