Ingredients
- 6 eggs
- 2 dry yeast
- 2 cups sugar
- 1 cup crisco melted and cooled
- 1 cup warm milk
- 2-3 cups water
- 12 cups flour

- 6-7 lbs ricotta, mixed
- 4 doz hard boiled eggs
- 4 lbs mozzarella
- 2 lbs pepperoni
- 2 1/2 lbs hard salami
- 2 1/2 lbs dry cappocola
Preparation
Step 1
mix dough in large pan and let rise until double in bulk
flour, sugar together. make well in dough and add eggs, yeast mix(according to directions on package), milk, and shortening and some salt. mix flour into beaten mix until it forms a dough batter
set aside in warm place and cover with saran wrap and a heavy towel to keep warm. when it is double, take pieces and roll out on floured board to size of disk ( 9 x 13)
begin to fill the dish with the following layers:(everything should be sliced thin)
sliced hard boiled eggs
sliced salami
ricotta cheese(mixed with egg, salt and pepper)
cappacola
mozzarella
pepperoni
eggs
mozzarella
ricotta then salami on top
roll out enough dough to cover the dish and seal edges together.
brush top with beaten egg and bake at 350 until golden brown.
remove from pan when cooled or it will get soggy
