Ingredients

  • 1/4 c unsalted butter, diced
  • 3 T light corn syrup
  • 1/2 c granulated sugar
  • 1/3 c all purpose flour
  • 1-2 tsp ground ginger

Preparation

Step 1

Preheat oven to 350 degrees
Place butter and syrup in heatproof bowl. Set over a pan of gently simmering water. Stir until melted, set aside. Mix sugar, ginger and flour. Add in butter mixture. Beat until combined. Cover and chill approximately 25 minutes. Line a baking sheet with parchment paper. Roll teaspoonfuls into balls. Place on pan, spaced second piece of parchment paper on top. Roll cookies as thin as possible. Remove top piece of parchment paper. Bake 5 to 6 minutes or until golden brown. Leave on cookie sheets for a few minutes. Gently remove and either leave flat or curl in half. Cool completely.
