Spinach, Red Onion and Feta Frittata

  • 1 t oil
  • 1/2 small onion finely sliced
  • 1/2 chopped frozen spinach, defrosted and drained
  • 4 eggs
  • 1/2 c feta cheese
  • pinch black pepper

Step 1

Preheat broiler to high. Heat oil in pan, add onion until slightly browned. Add spinach and toss for a min oor two. Remove from heat and cool slightly.

Beat eggs in lg bowl, add onion-spinach mixture, pepper and feta cheese.

Wipe out skillet and place over med heat. Pour in egg mixture.Stir gently until eggs start to set. Remove from heat and place under broiler 2-3min until frittata is golden brown. Check for doneness
