Broccoli Cornbread

Ingredients

  • 1/2 cup melted butter
  • 1/2 cup Pictsweet frozen Chopped Onions (I used onion flakes, and only about 1/4 cup)
  • 3 cups Pictsweet frozen Chopped Broccoli
  • 4 beaten eggs
  • 6 oz. cottage cheese
  • 1 (8 1/2-oz.) box corn bread muffin mix

Preparation

Step 1

Preheat oven to 400 degrees. Combine butter, onions, broccoli, eggs and cottage cheese. Stir well. Add the muffin mix and pour into a greased 9x13-inch baking pan. Or use a muffin tin. Bake for 25 to 30 minutes.
