Ingredients
- Vinaigrette:
- 3 Tblsp red wine vinegar
- 2 Tblsp water
- 1 tsp oregano
- pepper
- 1 tsp Dijon
- salt
- 2 garlic cloves, chopped
- 3 Tblsp olive oil
- Salad:
- 2 c. sliced fennel bulb
- 1 1/2 c. thinly sliced red onion
- 1 c. olives, halved
- 3/4 c. parsley
- 1/2 c. feta cheese
- 1 can cannellini beans, rinsed and drained
- 6 plum tomatoes, quartered
- 2 Tblsp sunflower seeds

Preparation
Step 1
Combine first 7 ingredients. Gradually add oil, stirring with whisk until blended.
Combine fennel and next 6 ingredients (though tomatoes) in lg bowl. Drizzle viniagrette over salad and sprinkle with sunflower seeds. Cover and chill at least 1 hr.
