Ingredients

  • Vinaigrette:
  • 3 Tblsp red wine vinegar
  • 2 Tblsp water
  • 1 tsp oregano
  • pepper
  • 1 tsp Dijon
  • salt
  • 2 garlic cloves, chopped
  • 3 Tblsp olive oil
  • Salad:
  • 2 c. sliced fennel bulb
  • 1 1/2 c. thinly sliced red onion
  • 1 c. olives, halved
  • 3/4 c. parsley
  • 1/2 c. feta cheese
  • 1 can cannellini beans, rinsed and drained
  • 6 plum tomatoes, quartered
  • 2 Tblsp sunflower seeds

Preparation

Step 1

Combine first 7 ingredients. Gradually add oil, stirring with whisk until blended.

Combine fennel and next 6 ingredients (though tomatoes) in lg bowl. Drizzle viniagrette over salad and sprinkle with sunflower seeds. Cover and chill at least 1 hr.
