Ceasar Salad with Tortellini

  • 3 Tblsp lemon juice
  • 3 Tblsp water
  • 1 1/2 Tblsp olive oil
  • 1 tsp anchovy paste\pepper
  • 1 garlic clove, crushed
  • 9 ounces tortellline, uncooked
  • 1 1/2 c. asparagus (2" pieces)
  • Romaine lettuce
  • Grated parmesan cheese



Step 1

Combine first 6 ingredients in a bowl; stirr well with a wire whisk.

Cook tortelline until tender. Drain well.

Steam asparagus 2 minutes and combine with tortellini in a bowl; add 2 Tblsp lemon juice to coat. Combine with lettuce and add juice mixture.
