- Pinch sugar
- 1/3 cup warm water
- 1 pkg. dried yeast
- 3 3/4 cups bread flour
- 1 1/2 tsp. salt
- 1 cup water
- 1/4 cup olive oil
Dissolve sugar in water, then sprinkle dried yeast over top. Whisk gently and let stand about 10 mins., until frothy.
FOOD PROCESSOR: Put flour and salt in bowl. Pulse to blend. When yeast is ready, add 1 cup water and olive oil to it. Turn on food processor. While it is running, steadily pour in liquid. Process until smooth. Turn out onto floured board and knead until smooth.
Place dough in greased bowl, turn over so top is greased and cover with plastic wrap. Put in a warm place to rise until doubled (1 to 2 hours).
Punch down; let rest 5 minutes, then roll or press by hand to fit pizza pan(s). Spray with olive oil spray or lightly brush on olive oil. Spread with pizza sauce, Parmesan cheese and desired toppings.
Bake at 400 degrees for approximately 20 minutes until topping is bubbly and not sloppy. Remove from oven; top with thinly sliced or shredded provolone or mozzarella. Bake for another 5-10 minutes until cheese is melted.
Note: Dough can be shaped and frozen for several weeks. Thaw before topping and baking.
