Raspberry Wildflower Honey Wine (Mead)

Ingredients

  • Yeast: 71B-1122 (1 packet)
  • 1 Gallon Spring or Purified Water
  • 3 1/2 pounds wildflower honey
  • 1.5 pounds red raspberries (frozen)
  • 1/2 tsp Pectin Enzyme
  • The juice from 1 lemon
  • The juice from 1 lime
  • 3 Tablespoons of strong english tea
  • 1 teaspoon of yeast nutrient

Preparation

Step 1

If using fresh berries, freeze for 1 day. Thaw berries for 30 minutes in a large bowl. Sprinkle with pectin enzyme. Crush the raspberries

Heat water to luke warm and add honey. Mix. Add the the ingredients in to a container that holds at least 1 1/2 gal.

Measure the SQ and note.

Pitch the yeast.

Place in a warm area or add a heat band for 1 week.

Rack the mead and place liquid in 1 gal. jar or carboy with an airlock.
