Cheddar Potato Soup

  • 1/3 Cup Onions, chopped
  • 1/3 Cup Celery, chopped
  • 2 Tbs. Butter
  • 4 Cups Potatoes, peeled, diced
  • 3 Cups Chicken Broth
  • 2 Cups Cheddar Cheese, shredded
  • 2 Cups Milk
  • 1/4 tsp. Black Pepper
  • Dash of Paprika
  • Seasoned Croutons
  • 6 Slices Bacon, cooked and crumbled for garnish



Step 1

In a large saucepan, saute onion and celery in butter until tender. Add potatoes and broth; bring to a boil. Reduce heat; cover and simmer for 10-15 minutes or until potatoes are tender. Stir in cheese, milk, pepper and paprika. Cook and stir over low heat until cheese is melted. Garnish with croutons and bacon.
