Ingredients

  • 2 1/4

    cups flour, sifted

  • 1/2

    cup unsweetened cocoa powder

  • 1

    tsp baking soda

  • 1

    tsp salt

  • 1 3/4

    cup sugar

  • 1/2

    cup unsalted butter, room temperature

  • 1/2

    cup vegetable oil

  • 2

    large eggs

  • 1

    tsp vanilla extract

  • 1/2

    cup buttermilk

  • 2

    cups unpeeled zucchini, grated

  • 3/4

    cup chopped walnuts

  • 1

    cup semi-sweet chocolate chips

Directions

Preheat oven to 325°F. Grease and flour a large tube pan. Sift dry ingredients (except sugar, nuts and chips) together. Beat sugar, butter and oil in a mixer until well blended. Add eggs one at a time, scraping bowl and mixing after each addition. Beat in vanilla, add dry ingredients alternately with buttermilk (3 dry additions and 2 wet – ending with dry). Mix in zucchini and pour into prepared pan. Sprinkle with nuts and chocolate chips. Bake until a knife inserted in centre comes out clean – about 50 minutes or so. Cool completely in pan.
