Chocolate Zucchini Cake
- 2 1/4 cups flour, sifted
- 1/2 cup unsweetened cocoa powder
- 1 tsp baking soda
- 1 tsp salt
- 1 3/4 cup sugar
- 1/2 cup unsalted butter, room temperature
- 1/2 cup vegetable oil
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup buttermilk
- 2 cups unpeeled zucchini, grated
- 3/4 cup chopped walnuts
- 1 cup semi-sweet chocolate chips
Preheat oven to 325°F.
Grease and flour a large tube pan.
Sift dry ingredients (except sugar, nuts and chips) together.
Beat sugar, butter and oil in a mixer until well blended. Add eggs one at a time, scraping bowl and mixing after each addition.
Beat in vanilla, add dry ingredients alternately with buttermilk (3 dry additions and 2 wet – ending with dry).
Mix in zucchini and pour into prepared pan.
Sprinkle with nuts and chocolate chips.
Bake until a knife inserted in centre comes out clean – about 50 minutes or so.
Cool completely in pan.
