Chilled Rhubarb Soup

  • 3 cup fresh/frozen rhubarb
  • 2 cup water
  • 1 cup strawberries (chopped)
  • 1/2 cup sugar
  • 1 tsp grated orange rind
  • 1/4 cup orange juice
  • 1 tbsp orange liqueur (optional)


Preparation time 25mins
Cooking time 25mins


Step 1

In a large saucepan, bring rhubarb, water, strawberries, sugar and orange rind and juice to a boil. Reduce heat and simmer, stirring until rhubarb breaks up, about 7 minutes.

Stir in liqueur. Strain through fine sieve into large bowl, pressing solids.

Cover and refrigerate until chilled. Ladle into soup bowls. If desired, garnish with ice cream or whipped cream.
