Dijon Pasta Salad

Ingredients

  • 1 lb tricolored fusilli or rotini pasta
  • 2/3 c corn oil
  • 2 T cider vinegar
  • 2 t Dijon mustard
  • 2/3 c mayonnaise
  • 2 large celery ribs, chopped
  • 6 thick cut bacon slices, cooked and chopped
  • 2 hard boiled eggs, chopped
  • 2 scallions, chopped
  • 1/2 to 1 t salt
  • paprika (optional)

Preparation

Step 1

Cook pasta in boilin water just until done, usually 11 to 13 minutes. Drain. Run cold water over pasta until it is completly cool.
In a large bowl, whisk together oil, vinegar, mustard, and mayonnaise. Add pasta and all other ingredients to dressing, mix carefully, and taste for seasoning. Chill throughly before serving.
