Ingredients

  • 1 3/4 cups cake flour
  • 1 cup sugar
  • 2 tsp. baking flour
  • 1/4 tsp salt
  • 1/2 cup canola oil
  • 4 egg whites
  • 2 tblsp. Confectioners sugar

Preparation

Step 1

Mix the dry ingredients in one bowl. Mix the orange juice and oil in another. Then combine and stir till smooth. Beat the egg whites until stiff peaks form. Hint: reserve 2 tblsp. Of the sugar to add at this time and your egg whites will whip up easier and fold in quicker: Now fold the egg whites into the orange- flour mixture. Pour into a prepared loaf pan and bake @ 350* for 55-60 minutes. Sprinkle with powdered sugar and you are done.
