RHUBARB UPSIDE DOWN CAKE (MOM)

  • Rhubarb, cut into small pieces
  • 1 1/2 cups brown sugar
  • 1 egg
  • 1/4 cup sugar
  • 1 tsp baking powder
  • 1 cup flour
  • 1/2 cup milk
  • 1/2 tsp vanilla

Preparation

Step 1

Mix rhubarb with brown sugar and put on bottom of 8 x 8" square pan. Mix rest of ingredients and pour over rhubarb. Bake at 325F for 25 minutes. Invert onto plate.
