Cheesecakes (mini)

Ingredients

• 12oz package vanilla wafers
• 2 8oz packages of cream cheese
• 3/4 cup white sugar
• 2 eggs
• 1 1/2 tsp vannilla extract
• garnish with pie filling or fresh fruit

Preparation

Step 1

Preheat oven to 350. Lightly grease tins.

Crush the wafers. Evenly place the crushed wafers into each tin. In a mixing bowl, beat cream cheese, sugar, eggs & vanilla until light and fluffy. Fill each tin with mixture, almost to the top. Bake for 15 min. Cool.

Top with a teaspoonful of pie filling or garnish with fresh fruit.
