winter squash and roasted potatoes

Ingredients
- 2 # tiny young potatoes or fingerlings
- olive oil
- 1 clove garlic minced
- 1 tsp thyme
- sea salt and ground pepper to taste
- banana squash peeled and cubed
- balsamic vinegar
- fresh greens and spinach

Preparation
Step 1
preheat oven 400 degrees
in roasting pan combine potatoes, olive oil, garlic, thyme and salt and pepper.
slice potatoes in half if they are larger than bite size
stir potatoes to distribute olive oil and seasonings. roast for 15-20 minutes til tender but not quite done.
add in squash, drizzle of olive oil and balsamic vinegar.
stir squash and potatoes together and coat the squash with the oil and seasonings. place roasting pan back into the hot oven and roast until potatoes and squash are fork tender and squah is caramelized- 15-20 minutes.
when squash and potatoes are done, remove the pan from oven and cool on a roack.
plate greens and spoon squash and potatoes onto greens. dress with good olive oil and balsamic vinegar. top with fresh pepper.
