Ingredients
- 1 - 9 " pastry shell
- 1/2 lb lean ground beef
- 1/4 lb ground sausage
- 3/4 c chopped red and/or yellow pepper
- 1 clove garlic, minced
- 1 c water
- 1 c chopped tomato
- 1/2 c tomato paste
- 1-1/2 tsp Italian seasoning
- 1/2 tsp salt
- 10 oz frozen spinach, thawed and well drained
- 2/3 c ricotta cheese
- 3/4 c shredded mozzarella cheese
Preparation
Step 1
Line pastry shell with a double thickness of foil. Bake in a 450 oven for 8 minutes. Remove foil. Bake 4-5 minutes more or until set and dry; set aside.
Reduce heat to 350.
In a medium skillet, cook beef, sausage, peppers and garlic until meat is brown and veggies are tender; drain off fat. Stir in water, tomato paste and seasonings. Heat to boiling; reduce heat and simmer, covered, for 10 minutes.
In a medium bowl, stir together spinach, ricotta and 1/2 c mozzarella cheese. Spoon into baked pastry shell. Top with meat mixture.
Cover edge of pastry with foil. Bake at 350 for 45 minutes. Remove foil and add tomato and remaining cheese. Bake 2 minutes longer.
Let stand 10 minutes before cutting.
