Split Pea Soup

I added potatoes to this for a complete and hearty meal or skip the potatoes and serve with fresh homemade bread and a salad

Ingredients
- 8 cups water
- 1 pound split green peas
- 4 cups ham
- 1 medium onion
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1 cup carrots
- 1 cup celery
- 1 cup potatoes
Preparation
Step 1
1. Heat water and peas to boiling in Dutch oven; boil
2 minutes
2. Remove from heat; cover and let stand 1 hour
3. Dice potatoes and carrots, dice onion and ham
4. Stir onion, salt and pepper into peas.
5. Heat to boiling; reduce heat.
6. Cover and simmer until peas are tender, about 1 hour
skim fat if necessary
7. Stir in ham, carrots celery and potatoes into soup
8. Heat to boiling; reduce heat
9 Cover and simmer until vegetables are tender, about
45 minutes
