Ingredients

  • DRESSING:
  • 1 cup quick brown rice, cooked as directed and chilled.
  • 1/4 cup chopped red onion
  • 1/4 cup chopped green bell pepper
  • 1 large tomato diced
  • 1/4 cup oil
  • 2 tbsp red wine vinegar
  • 1/2 tsp salt
  • 1.8 tsp pepper
  • 1/2 tsp worcestershire sauce
  • 1 clove garlic, sliced

Preparation

Step 1

Cook brown rice according to packaged directions; chill completely.

Mix together all dressing ingredients and chill one hour; remove garlic after 1 hour.

Stir chopped onion, bell pepper and diced tomato into chilled rice, pur dressing over mixture and mix well to combine all flavors.

If desired you can add 1 small can of cocktail shrimp
