Ingredients

  • 1

    cup quick brown rice, cooked as directed and chilled.

  • ¼

    cup chopped red onion

  • ¼

    cup chopped green bell pepper

  • 1

    large tomato diced

  • DRESSING:

  • ¼

    cup oil

  • 2

    tbsp red wine vinegar

  • ½

    tsp salt

  • 1.8

    tsp pepper

  • ½

    tsp worcestershire sauce

  • 1

    clove garlic, sliced

Directions

Cook brown rice according to packaged directions; chill completely. Mix together all dressing ingredients and chill one hour; remove garlic after 1 hour. Stir chopped onion, bell pepper and diced tomato into chilled rice, pur dressing over mixture and mix well to combine all flavors. If desired you can add 1 small can of cocktail shrimp
