Ingredients
- 1 small Onion, chopped
- 1/4 of a Green Pepper, chopped
- 3 T Butter
- 3 T Flour
- 1 1/2 C Chicken Stock
- 1 1/2 C Half and Half
- 1 C Sharp Cheddar Cheese, grated
- Salt and Pepper, to taste
- Dash of Cayenne Pepper (optional)

Preparation
Step 1
ln a saucepan, saute onion and green pepper in butter for 5 minutes.
Blend in flour. Add stock and half and half.
Cook until thick. Add cheese and stir until melted. Add salt and pepper to taste, and cayenne if desired.
Serves 3 to 4
